Colombia San Vicente Washed Castillo
This coffee is produced by smallholders that are members of OCCICAFE Cooperative in the San Vicente region of Huila. In 2015, OCCICAFE shifted its focus and has been making large improvements in the quality of coffee that they are producing. Once harvested, producers deliver samples of their coffee to the OCCICAFE lab. Here is where coffee is assessed and classified into distinct grades based on cup score: commercial, regional, regional plus or microlot.
Coffees that meet the regional plus standard need to cup above 85 points and must have a moisture content of between 10-11%. Since 2018, a selecting of OCCICAFE most innovative producers have started processing honeys with assistance from Cofinet.
