4-Day Anaerobic Natural Process
Process begins with carefully selected, ripe coffee cherries being placed into sealed, oxygen-free tanks for a 4-day (96-hour) period of anaerobic fermentation. Inside the tanks, pressure builds, and unique microbial activity transforms the sugars and acids in the fruit's mucilage, creating intense, wine-like, and complex aromatic compounds. After this controlled fermentation, the intact cherries are moved to raised African beds and dried slowly, like a traditional natural. This hybrid method combines the wild fruitiness of a natural process with the complexity of anaerobic fermentation, resulting in an exceptionally aromatic, clean and flavour-saturated cup.
