The Mierisch Family
For over a century, the Mierisch family has been a cornerstone of Nicaraguan specialty
coffee. Their story began in the early 1900s and today, this multi-generational family is
globally renowned for their unwavering commitment to quality, innovation, and ethical
farming. This coffee comes from Finca Los Placeres, which translates to "The Farm of
Pleasures." It is not only their largest farm but also the heart of their operations, housing their central processing mill (beneficio). Here, the family combines decades of tradition with state-of-the-art technology, meticulously overseeing every step to produce coffees of exceptional character and clarity.
Javanica
This coffee is crafted from the Javanica variety, a true gem in the world of coffee. A
descendant of the original Ethiopian Typica landraces, this variety was introduced to the
island of Java before making its way to Central America. It is prized for its unique, elongated
bean shape and a distinct, elegant flavour profile that sets it apart. In the fertile volcanic soils of Finca Los Placeres, the Javanica variety develops a stunning complexity, offering a cup that is delicate, floral, and reminiscent of fine tea—a stark and beautiful contrast to more traditional Central American profiles.
The Washed Process
The Mierisch family’s mastery is on full display in their execution of the washed process. This method is all about precision, designed to strip away the fruit and reveal the pure, intrinsic flavour of the bean itself. After careful, selective hand-picking of only the ripest cherries, the coffee is depulped and then allowed to ferment in tanks for a controlled period. This crucial step breaks down the remaining sticky mucilage, which is then "washed" away with clean water. The beans are then slowly dried on raised African beds, allowing for even airflow and a gentle reduction in moisture. This meticulous process results in an exceptionally clean, bright, and articulate cup, allowing the elegant notes of jasmine, bergamot, and citrus to shine with stunning transparency.
