This is second time we work with Agrogora. Last time we had an amazing Sidra.
This time we have a coffee from the Vilcabamba valley, famously known as the "Valley of Longevity." The combination of high altitudes between 1,600 and 1,800 meters, rich volcanic soil, and stable microclimates forces the coffee cherries to mature slowly. This extended maturation period develops denser, more complex beans, creating the potential for a bright, crisp acidity and elegant floral aromatics that are characteristic of this renowned terroir.
Meticulous Hands: The Cooperative and the Cultivar
This lot represents a collaborative effort between the smallholder farmers of the Vilcabamba Cooperative and the quality-focused export team at Agrogora. The true star, however, is the highly sought-after Typica Mejorado varietal. Despite its name, which translates to "Improved Typica," genetic testing has revealed it to be a unique hybrid of Bourbon and an Ethiopian Landrace. This fascinating genetic heritage is responsible for its distinctive and complex cup profile, setting it apart from true Typica varieties. The farmers' careful cultivation of this special varietal is essential for unlocking its full flavour potential.
The Essence of Clarity: The Fully Washed Process
The "Washed" process is designed to strip away all external fruit flavours to reveal the pure, intrinsic character of the coffee bean itself—the terroir, the variety, and the altitude. After de-pulping, the parchment-covered beans are fermented in clean water for 24-36 hours to break down the remaining sticky mucilage. Following fermentation, the beans are thoroughly washed in clean water channels before being carefully dried on raised beds. This meticulous, multi-step process results in a coffee of exceptional clarity and cleanliness, allowing the crisp notes of apple cider, delicate honeysuckle, and refined green tea to shine through, supported by a clean caramel sweetness.
