*Limited* SOE Guatemala Antigua Valley Washed
The Guatemalan Standard
Guatemala is revered worldwide as a producer of exceptionally flavorful and high-quality coffees. Among its celebrated regions, Antigua is often considered the crown jewel, setting the standard for what a classic Central American coffee should be. Its reputation is built on a foundation of consistency, complexity, and an approachable yet rich flavor profile. The "EP" (European Preparation) designation signifies a commitment to quality, indicating that the beans have been meticulously hand-sorted to remove defects, ensuring a clean and consistent cup.
The washed process achied the clean and bright flavor profile for which Antigua is known. Shortly after being hand-harvested, the coffee cherries are sent to a mill where the skin and pulp are removed by a machine. The beans, still coated in a sticky mucilage, are then fermented in water tanks for 12 to 48 hours. This fermentation breaks down the remaining fruit layer, which is then "washed" away with clean water. The result of this meticulous process is a coffee bean that purely expresses the flavors of its varietal and terroir, offering a crisp acidity and a clean finish.
